Ingredients
- 4 cups liquid
- 2 yeast cakes (compressed)
- 1 tablespoon salt
- 3 tablespoons sugar
- 4 tablespoons shortening
- 3 pounds flour
Instructions
- Scald milk or boil water. Cool one-half cup to lukewarm (85 degrees F.) and dissolve yeast in it. To rest of liquid add sugar, salt, and shortening. Cool to lukewarm (85 degrees F.) and add yeast. Add flour and knead until smooth and elastic. Let rise until light. It will have increased to about three times its original bulk. Knead until bubbles are broken up and gas evenly distributed. Shape into loaves. Place in greased pans and let rise until double in bulk and bake in the oven for 1 hour at 400 degrees for 15 minutes, 350 degrees for 45 minutes. By using half the quantity of yeast the bread may be mixed in the evening and left to rise over night.
