Virginia Corn Muffins

Ingredients
- 1 cup corn meal
- 1/2 cup flour
- 1/4 cup sugar
- 5 teaspoons baking powder
- 3/4 teaspoon salt
- 1 egg
- 1/2 cup milk
- 2 tablespoons melted shortening or cooking oil
Instructions
- Mix and sift dry ingredients. Beat egg and add milk. Combine mixtures and add shortening.
- Bake in well greased muffin pans in a moderately hot oven for 30 minutes at 375 degrees.
