Spinach Croquettes

Ingredients
- 1 cup chopped spinach
- 1 cup chopped boiled ham
- 1 tablespoon prepared mustard
- 1/2 cup boiled rice
- Rice water
Instructions
- Mix the spinach, ham, mustard, and rice and moisten with enough rice water to shape into croquettes. Dip croquettes in egg, roll in crumbs, and fry in deep fat until brown. Serve with Tomato Sauce (see page 239), in cooking 3 minutes each at 380 degrees fat. Servings, 6.
