Salmon in Cucumber Aspic

Ingredients

• 4 cucumbers
• 1 onion
• 1/2 teaspoon salt
• 1/8 teaspoon white pepper
• 1 quart water
• 2 tablespoons gelatine
• 1/2 cup cold water
• 1 cup salmon, flaked

Instructions

1. 1Peel and slice cucumbers and onion. Add salt, pepper, water, and simmer until soft. Strain and pour over gelatine, which has been softened in cold water. Cool until it begins to stiffen, add salmon, and turn into individual molds. Serve on lettuce garnished with sliced cucumber, and radish roses. Servings, 8.
