Stuff and truss.2In a frying-pan try out the fat salt pork, cut one-quarter inch thick. Add carrot cut in small cubes, and onion, thyme, parsley, bay leaf, and cook ten minutes. Then add butter and brown the duck in it.3Place on trivet in a deep pan, add the contents of the frying-pan, rinse it out with one cup of boiling water, and add another cup of boiling water.4Cover and bake in a moderate oven until tender, basting often and adding more water if needed. Serve with gravy made from stock in pan. Bake in the oven for 2 hours at 350 degrees.
