Potato Stuffing
Ingredients
- 2 cups hot mashed potato
- 1 1/4 cups stale bread crumbs (soft)
- 1/4 cup finely chopped salt pork
- 1 finely chopped onion
- 1 egg, slightly beaten
- 1 1/2 teaspoons salt
- 1 teaspoon sage
Instructions
- Put the potato through the ricer that there may be no lumps.
- Add remaining ingredients and mix lightly.
- Any dripping or fat may be used in place of the salt pork.
- Use as a stuffing for roast goose.
