Potato Flour Sponge Cake

Ingredients
- 4 eggs yolks
- 3/4 cup sugar
- 4 egg whites
- 3/4 cup potato flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 tablespoon lemon juice
Instructions
- Beat yolks of eggs until thick and lemon-colored and add sugar gradually, while beating constantly. Then add whites of eggs beaten until stiff. Mix and sift dry ingredients and cut and fold into mixture. Add lemon juice, turn into a greased and floured cake-pan, and bake in a moderate oven for 30 minutes at 325 degrees.
