Orange Sponge Cake

Ingredients

• 3 eggs
• 1 cup sugar
• 1/2 cup orange juice
• Grated rind of one orange
• 1 cup flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt

Instructions

1. 1Beat whites of eggs until stiff, then add the yolks one at a time, beating after each addition. Add the sugar, grated orange rind and orange juice. Fold in the flour mixed and sifted with baking powder and salt and bake in a shallow pan in a moderate oven for 40 minutes at 325 degrees. Cut in fancy shapes.
