Pea Soufflé

Ingredients
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 2 cups peas
- 2 eggs
- 1 teaspoon finely minced onion
- 1/2 teaspoon salt
- Speck pepper
Instructions
- Melt butter, add flour, and blend thoroughly. Add milk gradually and stir constantly until thickened. Add peas which have been forced through a sieve, egg yolks slightly beaten, and seasonings. Fold in stiffly beaten egg whites. Bake in a moderate oven. Bake in the oven for 30 minutes at 325 degrees.
