Parsnip Soufflé

Ingredients
- 2 eggs
- 1/2 cup milk
- Salt, pepper, cayenne
- 2 cups mashed parsnip
Instructions
- Add egg yolks slightly beaten, milk and seasonings to mashed parsnip. Fold in stiffly beaten egg whites, pour in buttered soufflé cups, and bake until firm in a moderate oven. Bake in the oven for 40 minutes at 300 degrees.
