Parsnip Fritters

Ingredients
- 2 cups mashed parsnip
- Pepper
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup flour
Instructions
- Boil parsnips and when tender, mash fine. Add seasonings and well beaten egg. Add flour, and drop by spoonfuls in hot fat or on a hot griddle, and fry until delicately browned. Serve with melted butter.
