Ingredients
- 1 tablespoon sugar
- 1 teaspoon mustard
- 1 tablespoon flour
- 1 teaspoon salt
- Speck cayenne
- 3/4 cup rich milk
- 2 egg yolks
- 1/4 cup vinegar
- 1 tablespoon gelatine
- 2 tablespoons cold water
- 2 cups flaked fish
- 1 tablespoon butter
Instructions
- Mix dry ingredients and add to milk, cook until thick.
- Beat egg yolks, add vinegar, and add to thickened mixture.
- Cook two minutes longer; then add the gelatine which has been soaked in the cold water and stir until well dissolved.
- Add fish, butter, and more salt if necessary.
- Pour into a greased mold and let stand until firm.
- Serve on crisp tender lettuce leaves with or without mayonnaise. Servings, 6.
