Japanese Icing

Ingredients

• 1 cup sugar
• 1/8 teaspoon cream of tartar
• 1/8 cup water
• 1 egg white
• 1/4 teaspoon almond extract

Instructions

1. 1Cook sugar, cream of tartar, and water together until it will spin a thread. Pour gradually, beating constantly, over stiffly beaten white of egg. Add almond extract and beat until thick.
