Hongroise Potatoes

Ingredients
- 2 cups cubed potatoes
- 2 tablespoons butter
- 1 cup milk
- 1 slice onion
- 2 tablespoons flour
- 2 tablespoons water
- 1 egg yolk
- 1 tablespoon chopped parsley
Instructions
- Boil potatoes in salted water for three minutes and drain. Cook in melted butter until tender and brown. Bring milk, to which the onion has been added, to the boiling point. Add paste made of flour and water and cook until thickened, stirring constantly. Gradually add well beaten egg yolk. Remove onion, and pour sauce over potatoes. Sprinkle parsley over the top.
