Cucumber Salad (Russian)

Ingredients

• 1 1/2 cups diced cucumber
• 2 teaspoons salt
• 2 tablespoons vinegar
• 1 1/2 cups diced red beets
• 2 tablespoons chopped onion
• 1 tablespoon chopped green dill
• 1/2 cup sour cream

Instructions

1. 1Cover cucumber cubes with two teaspoons salt, let stand one hour. Pour vinegar over cooked, diced beets, let stand one hour. Pour off water which has accumulated on cucumbers, then mix all ingredients lightly together, using salt and pepper to taste. If sour cream is not available add one tablespoon lemon juice to one-half cup sweet cream, and let stand one hour. Serve on lettuce leaves. Servings, 6.
