Pour vinegar over cooked, diced beets, let stand one hour. Pour off water which has accumulated on cucumbers, then mix all ingredients lightly together, using salt and pepper to taste. If sour cream is not available add one tablespoon lemon juice to one-half cup sweet cream, and let stand one hour. Serve on lettuce leaves. Servings, 6.
