Cucumber Catsup

Ingredients

• 12 large cucumbers
• 4 onions
• 4 tablespoons salt
• 2 tablespoons black pepper
• 1 quart vinegar
• 3 tablespoons sugar
• 1 tablespoon grated horseradish
• 1 tablespoon celery seed
• 1 tablespoon mustard seed

Instructions

1. 1Chop cucumbers and onions fine and let stand overnight. Drain, squeeze as dry as possible, and add remaining ingredients. Pack in glass jars and seal.
