Cabbage In Hollandaise Sauce

Ingredients
- 1 cabbage (medium size)
- 1 tablespoon butter
- 1 tablespoon flour
- 1 1/2 cups water
- 1/2 teaspoon salt
- Speck paprika
- Few grains pepper
- 1 egg
- 1 teaspoon lemon juice
Instructions
- Boil the cabbage and drain. Make the sauce by combining the butter and the flour, and cooking it in a saucepan. When it is bubbling, add the water. Cook until the mixture is smooth and thick. Add the seasonings and remove from the fire. Pour over the well beaten egg. Add the lemon juice and stir over hot water for a few minutes. Pour over the cabbage and serve at once. Servings, 6.
