Strawberry Souffle

Ingredients
- 1 1/2 tablespoons flour
- 2 1/2 cups milk
- 1 tablespoon butter
- 2 egg yolks
- 2 egg whites (stiffly beaten)
- 2 cups berries
- 1/4 cup sugar
- 1 tablespoon cornstarch
Instructions
- Mix flour with enough cold milk to make smooth paste, and stir into the remaining milk which has been scalded. Cook one minute, then add butter, egg yolks, and beat well. Fold in egg whites and fill greased custard cups. Stand cups in a pan of boiling water and bake in a moderate oven for 25 minutes at 325 degrees. Serve hot with the sauce.
- Sauce: Cook 2 cups berries, 1/4 cup sugar, and 1 tablespoon cornstarch together until thickened.
