Spinach And Onion Soup

Ingredients
- 1 slice bacon
- 3/4 cup sliced onion
- 3/4 cup canned spinach
- 2 cups boiling water
- 2 cups milk
- 1 teaspoon salt
- Cayenne
- 1 tablespoon bacon fat
- 2 tablespoons flour
Instructions
- Cut the bacon in small pieces and cook until crisp and brown. Pour off the fat to use later. To the bacon add the onion, spinach, and water and cook slowly twenty minutes. Rub through a coarse strainer and add milk and seasonings. Thicken with the bacon fat and flour creamed together. Bring to the boiling point and serve. Servings, 4.
