Snow Pudding

Ingredients
- 1 tablespoon granulated gelatine
- 1/4 cup cold water
- 1/4 teaspoon salt
- 1 cup boiling water
- 1 cup sugar
- 1/4 cup lemon juice
- 3 egg whites
Instructions
- Soak gelatine in cold water and add salt. Pour boiling water over it and stir until dissolved. Add sugar and lemon juice, and strain into a large bowl to cool. Beat the egg whites until stiff. When the jelly thickens add the eggs and beat with wire whisk until stiff enough to hold its shape. Serve with Custard Sauce (see page 162).
