Rice Omelet

Ingredients
- 3 egg yolks
- 2 cups cold boiled rice
- 3 tablespoons water
- 1 tablespoon sugar
- Grating of nutmeg
- 3 egg whites
Instructions
- Beat the egg yolks until lemon-colored, add the rice and water and mix thoroughly, add sugar, nutmeg, and lastly the stiffly beaten egg whites. Turn into a hot greased omelet-pan and cook like a plain omelet. When done, fold and serve on a platter garnished with little squares of jelly.
