Potato Spoon Bread

Ingredients

• 3/4 cup corn meal
• 2 teaspoons salt
• 1 1/2 cups water
• 2 eggs
• 3/4 cup milk
• 3/4 cup mashed potatoes
• 1 tablespoon shortening

Instructions

1. 1Mix the corn meal, salt, and water, and boil five minutes.
2. 2Beat eggs slightly, add milk, mashed potatoes, and shortening.
3. 3Combine with mush mixture.
4. 4Beat well and bake in a greased baking dish in a moderate oven. Serve from the same dish with a spoon. Bake in the oven for 40 minutes at 325 degrees.
