Potato Croquettes

Ingredients
- 2 cups hot riced potatoes
- 2 tablespoons butter
- 1/2 teaspoon salt
- Pepper
- 1/4 teaspoon celery salt
- Few drops onion juice
- 1 egg yolk
- 1 teaspoon finely chopped parsley
Instructions
- Mix ingredients in order given and beat thoroughly. Shape, dip in crumbs, egg, and in crumbs again. Fry in deep fat and drain. Cook for 3 minutes to each croquette at 380 degrees fat temperature.
