Molded Chicken Salad

Ingredients
- 2 cups chicken meat
- 2 tablespoons gelatine
- 2 tablespoons cold water
- 3/4 cup boiling water or stock
- 1 teaspoon salt
- 2 tablespoons lemon juice
- 1/8 teaspoon onion extract
- 1 cup heavy cream
Instructions
- Chop or dice chicken. Soak gelatine in cold water and dissolve in boiling water. Add salt, lemon juice, and onion extract. Add to chicken and cool. Whip cream and fold into the chicken. Pack in ring molds and when set, turn out on a bed of crisp lettuce leaves. Fill centre with two cups of diced pickled beets. Servings, 6.
