Mocha Shortcake

Ingredients
- 1/4 cup shortening
- 1 cup sugar
- 1/4 teaspoon vanilla
- 1 3/4 cups flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 egg whites
Instructions
- Cream the shortening, add the sugar slowly and then the vanilla. Mix and sift the dry ingredients, and add to first mixture, alternately with the milk. Beat thoroughly and fold in the stiffly beaten egg whites. Bake in two layer cake pans in a moderately hot oven for 35 minutes at 375 degrees. Put together with Mocha Cream Filling (see page 200). Servings, 8.
