Macaroni Croquettes

Ingredients
- 1 cup milk
- 4 tablespoons flour
- 2 tablespoons butter
- 2 cups chopped, cooked macaroni
- Salt and pepper
- Egg
- Crumbs
Instructions
- Make white sauce of milk, flour, and butter. Mix with macaroni and season. Form into croquettes about the size of an egg, dip in flour, egg, and crumbs. Fry in deep fat. Serve with Thin White Sauce (page 240). Time in cooking, 3 minutes each at 380 degrees fat temperature.
