Mix sugar, salt, and cornstarch, and pour milk on gradually. Cook in a double boiler for fifteen minutes, stirring constantly until thickened, and afterwards occasionally.2Beat egg yolks and add to first mixture. Then cook three minutes, stirring constantly. Remove from stove; add lemon juice and grated rind. Cool slightly and pour into baked crust.3Cover with meringue (see page 195). Brown in a moderate oven in the oven for 20 minutes at 325 degrees.
