Ham with Scalloped Potatoes

Ingredients
- 1/3 cup ham fat
- 1/4 cup flour
- 4 cups hot milk
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 2 tablespoons minced parsley
- 6 cups diced cold potatoes
- 2 cups diced ham
Instructions
- Melt ham fat, add flour, and stir until smooth. Add hot milk and bring to boil, stirring constantly, and add seasonings. Cut cold boiled potatoes in half-inch dice and cooked ham in dice or small pieces. Put potatoes and ham in baking dish or casserole, add sauce and bake in a moderately hot oven. Bake in the oven for 20 minutes at 375 degrees.
