Ingredients
- 1/3 cup butter or other shortening
- 1/2 cup sugar
- 1 egg
- 1 lemon (grated rind)
- 2 tablespoons milk
- 1 cup flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup currants
Instructions
- Cream shortening, add sugar gradually, beating all the time, then the beaten egg and lemon rind. Add milk and flour mixed and sifted with baking powder and salt. Save out a little of the flour to mix with the currants, which have been washed, and add them last. Drop on greased tin and sprinkle with sugar. Bake in a hot oven for 10 minutes at 400 degrees.
