Corn Meal Souffle

Ingredients
- 2 cups milk
- 1/3 cup corn meal
- 3 tablespoons butter
- 1/4 cup grated cheese
- Salt
- Pepper
- 2 eggs
Instructions
- Scald milk, stir in corn meal gradually, and cook twenty minutes in a double boiler. Add butter, grated cheese, and salt and pepper to taste. Separate eggs, beat yolks until light and whites until stiff. Add yolks to first mixture and blend thoroughly. Fold in whites. Bake in greased baking dish in a moderate oven for 45 minutes at 325 degrees.
