Blanket Recipe for Vegetable Cream Soups
Ingredients
- 1 1/2 cups vegetable pulp (made of any cooked vegetable)
- 2 cups cold water
- 1/2 teaspoon onion juice
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons butter
- 2 tablespoons flour
- 2 1/2 cups milk
Instructions
- Combine the vegetable pulp and water with the seasonings, and simmer for ten or fifteen minutes. Melt the butter, stir in the flour, and gradually add the milk, stirring almost constantly, and cook until thickened. Then combine it with the vegetable pulp and liquid, which may or may not be pressed through a sieve.
