"Best" Piccalilli
Ingredients
- 1 cup salt
- 1/2 peck ripe tomatoes (chopped fine)
- 1/2 peck green tomatoes (chopped fine)
- 6 red sweet peppers (chopped)
- 6 green sweet peppers (chopped)
- 12 small onions (chopped)
- 2 quarts vinegar
- 3 pints brown sugar
- 1 teaspoon whole cloves
- 1 tablespoon mustard seed
- 1 tablespoon cinnamon
Instructions
- Add salt to tomatoes, let stand four hours, drain, and add remaining ingredients. Boil three-quarters of an hour. Pack in hot sterilized jars and seal or keep in a crock in a cool place.
