Baked Lima Beans With Tomatoes

Ingredients
- 1 pound Lima beans
- 2 cups cooked tomato
- Salt, pepper
- 2 thick slices bacon
Instructions
- Soak beans overnight, parboil five minutes, rinse, cook in water to cover until tender. Add one teaspoon of salt to every quart of water used. More water may be added if necessary during boiling. Season tomato with salt and pepper to taste, add to beans which have been drained of all liquid. Put into baking pan, put bacon on top and bake in a moderate oven until bacon is crisp and brown in the oven for one-half hour at 350 degrees. Servings, 8.
